Cook jasmine or long-grain rice(300 g) in salted water (salt(1 łyżeczka)) per package instructions. Drain and spread in a thin layer on a large plate or tray. Refrigerate for at least 30 minutes, ideally overnight.
Tip
Fresh hot rice turns into mush on the pan. Cold, dried-out rice has separate grains that fry properly. This is the most important step.

Chop the vegetables

Dice onion(1 szt) finely. Mince garlic cloves(3 szt). Peel carrot(1 szt) and cut into 5 mm dice. Slice spring onion(3 szt) thinly, separating white parts from green.

Fry the eggs

Heat a large pan 28 cm over high heat. Add 1 tablespoon of rapeseed or sunflower oil(3 łyżka). Crack eggs(3 szt) straight onto the pan, stir lightly with a spatula and let them set into large, soft pieces — about 30 seconds. Transfer to a plate.
Tip
Eggs go on a separate run because if they hit the rice straight away, they'd coat the grains and turn everything into a paste.

Stir-fry the vegetables

Add another 2 tablespoons of rapeseed or sunflower oil(3 łyżka) to the same pan. Add onion(1 szt) and the white parts of spring onion(3 szt), stir-fry for 2 minutes. Add carrot(1 szt) and cook for 3 more minutes — the carrot should still have a slight bite. Add garlic cloves(3 szt) and frozen peas(150 g) straight from the freezer, stir for 1 minute.

Add rice and sauce

Add the cold jasmine or long-grain rice(300 g) to the pan. Break up clumps with a spatula and fry for 3-4 minutes, pressing the rice against the bottom and tossing — the goal is to toast the grains slightly, not just warm them. Pour soy sauce(3 łyżka) around the edge of the pan and stir in. Add the fried eggs(3 szt), mix.
Tip
Pour the sauce around the rim, not in the middle. Soy caramelises on the hot metal and gives that distinctive takeaway-rice flavour.

Finish and serve

Take the pan off the heat. Drizzle with sesame oil(1 łyżeczka) and stir through. Sprinkle with the green parts of spring onion(3 szt). Serve immediately.
Tip
Sesame oil goes in at the end, off the heat — high temperature kills its aroma.
