Step 01 of 09

Heat the oven

Set the oven to 100°C°C. You'll park finished components there to keep them warm — with this many things going at once you can't plate them straight off the pan together.

Step 02 of 09

Prep the veg

Quarter the mushrooms (200 g). Halve the tomato (2 szt). That's it.

Step 03 of 09

Brown the sausages

Heat oil (2 łyżka) in a 28 cm cm pan over medium heat. Add the pork breakfast sausages (4 szt) and cook for 12 minutes, turning every few minutes until golden all over. Transfer to a tray and slide into the oven.

Tip
Medium heat, not high. Sausages need to cook through — high heat burns the outside and leaves the inside raw.

Bacon and tomatoes

In the same pan (don't wash it) lay out the smoked bacon slices (6 szt). Cook 3-4 minutes per side until crisp. Next to it place the tomato (2 szt) cut-side down — season with salt (1 łyżeczka) and black pepper (1 łyżeczka). Cook tomatoes 4 minutes one side, flip and 2 more minutes. Move it all to the oven.

Mushrooms

Add half the butter (30 g) and the mushrooms (200 g) to the pan. Cook 6 minutes over medium-high, stirring rarely. Season with salt (1 łyżeczka) and black pepper (1 łyżeczka). Transfer to the oven.

Tip
Don't salt mushrooms at the start — salt pulls out water and they'll steam instead of frying.

Heat the beans

Tip baked beans in tomato sauce (400 g can) (1 szt) into a small saucepan. Heat over low for 5 minutes, stirring. Keep on the lowest flame.

Step 07 of 09

Fried bread

Add the rest of the butter (30 g) to the mushroom pan. Lay in the thick bread slices (2 szt) and fry 1.5 minutes per side — it'll soak up the pan juices and turn golden. This isn't toast, it's fried bread — the key element.

Fried eggs

In a clean pan heat oil (2 łyżka) over medium. Crack in the eggs (4 szt) carefully, one at a time. Fry for 3 minutes — whites set, yolks still runny. Season with salt (1 łyżeczka) and black pepper (1 łyżeczka).

Tip
Crack each egg into a small bowl first, then into the pan. If a shell drops in, it's easier to fish out of a bowl than out of hot oil.

Pull everything from the oven. On each plate arrange: 2 pork breakfast sausages (4 szt), 3 slices smoked bacon slices (6 szt), half a tomato (2 szt), a pile of mushrooms (200 g), a portion of baked beans in tomato sauce (400 g can) (1 szt) (ideally in a small bowl so they don't flood the rest), a slice of thick bread slices (2 szt) and 2 eggs (4 szt) on top.
