Prep the chicken

Pat chicken thighs (bone-in, skin-on) (1200 g) dry with paper towel. Season both sides with salt (1 łyżeczka) and black pepper (0,5 łyżeczka).

Tip
Dry chicken browns; wet chicken just steams in the pan.

Sear the chicken

Heat lard (or oil) (3 łyżka) in a heavy pot or deep 28 cm pan over medium-high heat. Place chicken thighs (bone-in, skin-on) (1200 g) skin-side down and cook 5-6 minutes until the skin is golden brown. Flip and cook 3 minutes more. Transfer to a plate.

Cook the vegetables

Dice onion (large) (3 szt) finely and slice red bell pepper (1 szt) into strips. Add to the same pot (in the chicken fat) and cook over medium heat 8-10 minutes until the onion is soft and translucent.

Add paprika and broth

Take the pot off the heat. Add sweet ground paprika (3 łyżka) and stir for 30 seconds into the hot vegetables. Pour in tomato passata (100 ml) and chicken broth (400 ml), return to the heat.

Tip
Paprika burns in seconds and turns bitter. That's why we add it off the heat.

Simmer the chicken

Return chicken thighs (bone-in, skin-on) (1200 g) to the pot, skin-side up. Reduce heat, cover, and simmer 35 minutes. The meat should pull away from the bone.

Make the sour cream sauce

Remove the chicken to a plate. In a bowl, whisk sour cream 18% (250 ml) with wheat flour (1 łyżka) until smooth. Add 3-4 tablespoons of hot sauce from the pot to the cream and stir — the cream must warm up before going into the pot.

Tip
Cold sour cream dumped into hot sauce curdles and floats in lumps. Warming it with a few spoons of hot sauce solves this.

Combine and serve

Pour the cream into the pot, stirring, and heat 2-3 minutes until the sauce thickens. Don't bring to a full boil. Return chicken thighs (bone-in, skin-on) (1200 g) to the sauce. Sprinkle with parsley (chopped) (2 łyżka). Serve with dumplings, pasta, or potatoes.
