Peel potatoes (floury)(1200 g) and cut into quarters. Put into a large pot, cover with cold water by two fingers. Add 1 teaspoon of salt(2 łyżeczka). Bring to a boil.

Boil the potatoes

Boil potatoes (floury)(1200 g) covered for 20 minutes, until a fork slides in with no resistance.

Pan-fry the sausage

Meanwhile slice smoked sausage(500 g) into 1 cm rounds. Heat rapeseed oil(1 łyżka) in a 28 cm pan and fry the sausage over medium heat for 6-8 minutes, stirring every minute, until the edges colour. Take off the pan and set aside — it goes in at the end.

Kale on top of the potatoes

Dice onion(1 szt) finely. When the potatoes have 5 minutes left, drop onion(1 szt) and kale (fresh, chopped)(400 g) straight into the pot with the potatoes. The kale will wilt and fit. Cook for 5 more minutes — the kale should be soft but still green.
Tip
Kale cooks together with the potatoes, not separately. In stamppot everything is mashed into one mass — it's not two layers on the plate.

Warm the milk with butter

In a small saucepan warm whole milk(150 ml) with butter(60 g) until the butter melts. Cold milk would chill the potatoes and make the mash gluey.

Mash it all together

Drain the pot (potatoes, kale, onion). Tip back into the hot pot. Pour in the warm whole milk(150 ml) and butter(60 g) mix, add mustard (dijon style)(1 łyżka), 1 teaspoon salt(2 łyżeczka) and 1 teaspoon black pepper(1 łyżeczka). Mash with a potato masher — it should be a thick, chunky mash with visible bits of kale. Do not use a blender.
Tip
A blender turns potatoes into glue. Masher or fork only.
Step 07 of 07
Serve
500 g
Spoon the mash onto plates, make a well in the centre with the back of a spoon (the Dutch call it a "kuiltje" — a dip to catch sausage juices). Pile slices of smoked sausage(500 g) into it.
