Chop pitted dried dates(200 g) into small pieces. Pour boiling water(250 ml) over them and add baking soda(1 łyżeczka). Leave for 15 minutes.
Tip
Baking soda softens the date skins so they melt into the batter instead of staying chewy.

Prep the oven and pan
Heat oven to 175°C°C (top-bottom). Grease a 23 cm cm pan with butter and line with baking paper.

Cream butter with sugar

Beat butter (soft)(80 g) with brown sugar(150 g) for 3-4 minutes until pale and fluffy. Add eggs (large)(2 szt) one at a time, mixing after each. Stir in vanilla sugar or extract(1 łyżeczka).
Tip
Butter must be properly soft — take it out an hour ahead. Cold butter won't aerate and the cake comes out dense.

Combine everything

Mix wheat flour(180 g) with baking powder(1 łyżeczka). Fold into the butter mixture with a spoon, just until combined. Pour in the soaked pitted dried dates(200 g) with all their water and stir gently.
Tip
The batter will be very loose, almost like soup — that's correct. The date water is what makes the finished cake moist.

Bake the cake
Pour the batter into the pan and bake at 175°C°C for 35 minutes. Check with a skewer — it should come out with moist crumbs, not raw batter.

Make the toffee sauce

In a saucepan melt butter (for sauce)(100 g) with brown sugar (for sauce)(150 g) over medium heat. Once the sugar dissolves, pour in heavy cream 30%(200 ml) and add salt(1 szczypta). Simmer for 3-4 minutes, stirring, until thick enough to coat a spoon.
Tip
Don't crank up the heat — brown sugar burns fast and the sauce turns bitter.
Step 07 of 07
Serve
Turn the warm cake out, cut into 8 pieces. Pour half the sauce over the cake now — it will soak in. Serve the rest at the table.
Tip
Sticky toffee pudding is meant to be served warm. Leftovers: microwave 30 seconds with a spoonful of sauce on top.
